Exporting the scores this way (please see screenshot below) does it in a format that's difficult to understand, is there a better way?

Please see some instructions below on how to publish student quiz scores without the learners seeing their marks:
- Locate your quiz so it can be edited. In the Assessment tab , uncheck the boxes "Allow attempt to be set as graded immediately upon completion" and "Allow automatic export to grades".
- After all students have completed their attempts, "hide" the quiz from users.
- "Hide" the grade item in the Grades tool that the quiz is associated to.
- Locate the quiz and add in student grades/feedback as desired.
- Once each attempt has a grade, click the "Select All" checkbox, followed by the "Publish Feedback" icon; student quiz grades will then be exported to the Gradebook.
- You can then unhide both the quiz and the respective grade item when you would like your learners to see their marks
