@Alexander Ricci - just spoke with Product and here's their reply:
In general if the images are embedded in the actual quiz questions, those images were stored in Course Files), and the copy was done with "Include associated files", those images should have their URLs updated on copy to point to the new course (and the images should be copied to the new course as well).
If "Include associated files" isn't checked on copy, it's intended that the images won't move over and the URLs won't update.
But if that setting is checked and everything else I said above is met, that sounds like a bug - in which case your institution's admin should start the Support process.
